Red Kidney Bean Burgers

Ingredients
- 2 tins of red kidney beans (400g each)
- Fresh coriander
- 1 egg
- 3 slices of wholemeal bread
- 1 red onion
- Salt
- Pepper
- Tomato puree
- Garlic granules
- Paprika
- Oil

Method
- Chop the red onion into fine little pieces. Blitz the 3 slices of bread in a food processor or with a hand blender to make breadcrumbs.
- Heat a splash of oil in a frying pan and fry the onions with the garlic granules, salt, paprika and pepper. Fry until translucent.
- Whilst the onions are frying, drain and smash the kidney beans.
- Add the breadcrumbs and fried onions to the kidney beans. Add the cracked egg and fresh coriander to the mix.
- Spoon out the mix into balls and spoon the balls in the frying pan. Smash the burger ball with a spoon. Fry until brown.
- Serve warm and fresh.
