Greek Salad

A simple, satisfying summertime staple that makes you feel like you鈥檙e strolling along the sunny streets of Santorini.

Ingredients

  • 1 cucumber
  • 200g lettuce
  • Tomatoes
  • 1 red onion
  • Olives (can be omitted)
  • Feta cheese
  • 2 tablespoons olive oil
  • Lemon juice or a whole lemon
  • Mint leaves
  • Oregano

Method

  1. Prepare each of the vegetables by chopping them into small chunks. Add to a bowl
  2. Crumble the feta into chunks and add those chunks to the bowl alongside some plucked mint leaves and sliced olives (if you like them).
  3. If the lemon isn鈥檛 already juiced, squeeze some juice out of it. Add the lemon juice to the olive oil to create a fresh, zesty dressing and splash all over the bowl of salad.
  4. Sprinkle on some dried oregano.
  5. Toss and serve.
